Peach Butter Cake
2 cups Self Raising flour
6 tbsp softened butter
2 eggs
1 tsp vanilla
3/4 cup sugar
1/2 cup milk
1 tin of peaches
Preheat oven to a moderate temperature.
Cream butter and sugar together. If the butter is still hard, melt it partially in the microwave or on the stove top (in a pot preferably)
Add eggs and beat well until combined.
Add vanilla and beat well.
alternately add milk and flour, mixing well after each addition.
Once mix is smooth, grease a 8inch cake tin and layer peaches and cake mix.
Bake for 50-55 minutes or until skewer comes out clean.
Use as many or as little peaches as you desire or change it for a different type of fruit. You can even puree the fruit and swirl it through the cake mix.
