Highly possible Coconut Pie
Ingredients
4 eggs
1 cup of sugar (castor sugar preferably)
5 tbsp of soft butter
1 cup dessicated coconut
Grated rind of 1 lemon, 1 lime, 1 orange
Juice of 1 lemon, 1 lime, 1 orange
1 cup of coconut milk
1/2 cup of plain flour (this can be substituted for self raising flour if you want a lighter pie)
Method
1. Mix all ingredients in a blender until well combined
2. Pour into a greased 11inch/28cm pie/cake tin and bake for 1 hour in a moderate preheated oven (180 Celsius) or until lightly browned.
3. Cool and refrigerate minimum 1 hour before serving
